Did anyone feel like their interviewers were not particularly personable/did not want to be there? I found it really hard to connect with them, which was surprising because of how kind the students and faculty were.

One of my interviewers showed zero emotion the entire time. No follow up questions, no smiles, no interest, just a blank face. Made it very challenging.

Yes! It is comforting to see that others had the same experience.

my interviews were two med students and one faculty and I thought I was going to have one med student, one faculty, and one admissions person. Did anyone else have this experience?
Yes I had the exact same thing

I think they're very understaffed, I wouldn't read too much into it tbh.
