You don't have to do the tertiary at all if you don't wish to. There will be more information on the day of the interview and in info sessions leading up to it I'm sure. You can start to think about it if you're interested in the directed pathway NYU offers once you've been accepted.

It very well could be; I wouldn't worry. Either way, NYU only begins sending out acceptance offers after 90% of interviews have completed if not all of them. Your interview day doesn't affect your chance of acceptance.

Interview invites are sent in batches over a few days each month. There could be a number of reasons someone receives an invite on Thursday vs Friday vs Monday; it doesn't affect your chances and shouldn't be a cause of concern.
